A delightful twist on classic tiramisu with the rich flavor of pistachios.
Ingredients

- 1 cup shelled pistachios
- 1 cup heavy cream
- 1 cup mascarpone cheese
- 1 cup brewed coffee, cooled
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 tablespoons unsweetened cocoa powder
- 24 ladyfinger cookies
Instructions
- Blend the pistachios until fine and set aside.
- In a bowl, whip the heavy cream until stiff peaks form.
- In another bowl, combine mascarpone, sugar, vanilla, and the blended pistachios.
- Fold the whipped cream into the mascarpone mixture.
- Dip ladyfingers into the brewed coffee and layer them in a dish.
- Spread a layer of the pistachio mixture over the cookies.
- Repeat layers until ingredients are used up.
- Chill for at least 4 hours before serving.
- Dust with cocoa powder before serving.
