Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 6- or 7-inch round cake pans with butter, then sprinkle flour inside.
  2. In a small bowl, combine milk with apple cider vinegar or lemon juice. Allow it to rest for about 5 minutes.
  3. Using a food processor, pulse the ground pistachios and sugar until finely ground, about 30 seconds.
  4. In a large mixing bowl, whisk together the flour, baking powder, and salt. Fold in the ground pistachio mixture.
