- 1/2 cup Unsalted Butter (Melted)
- 2 Large Eggs
- 1 teaspoon Vanilla Extract
- 1/2 cup Buttermilk
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and unsweetened shredded coconut. Whisk until well-mixed.
- In another bowl, melt the unsalted butter and let it cool slightly. Whisk in the eggs, vanilla extract, buttermilk, and well-drained crushed pineapple until smooth.
- Gently pour the wet ingredients into the dry mixture and stir until just combined, leaving a few lumps.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-60 minutes, checking for doneness with a toothpick.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
