Ingredients

- 1 medium cauliflower head
- 2 cups white vinegar
- 2 cups water
- 1 tablespoon salt
- 1 teaspoon sugar
- 3 garlic cloves
- 1 teaspoon red chili flakes
- 1 teaspoon mustard seeds
- 1/2 teaspoon turmeric
- 1 teaspoon black peppercorns
- 1 cup mixed vegetables (carrots, bell peppers, or green beans)
Instructions
- Wash and cut the cauliflower into bite-sized florets.
- Optional: blanch florets in boiling water for 1–2 minutes then cool in ice water.
- Sterilize glass jars thoroughly.
- Heat vinegar, water, salt, and sugar until dissolved.
- Add garlic and spices into jars.
- Pack cauliflower and vegetables tightly into jars.
- Pour hot brine over vegetables until submerged.
- Remove air bubbles and seal jars.
- Cool to room temperature then refrigerate.
- Let marinate 24–72 hours before serving.
