Instructions
- In a large mixing bowl, whisk together ½ cup of melted unsalted butter, 1 egg white, and 1 teaspoon of peppermint extract until fully combined, about 2 minutes.
- Sift in 1 cup of all-purpose flour, ¼ cup of Dutch process cocoa, and ¾ cup of icing sugar. Stir gently until the dough begins to clump together.
- Transfer the dough onto parchment paper and roll it out into a rectangle about ¼ inch thick. Cut into desired shapes.
- Roll the dough around a straw and chill in the fridge for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and bake the cookies for 10 minutes. Allow to cool.
- Make the peppermint filling by beating together ¼ cup of softened unsalted butter, 1 cup of icing sugar, and a pinch of salt.
- Fill each cooled cookie with the prepared peppermint fondant.
