Description

Ingredients

  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • Pinch of nutmeg
  • 1/4 cup heavy whipping cream
  • 3 oz vanilla yogurt
  • 1 large egg
  • 1 can (15 oz) peaches, diced (reserve juice for glaze)
  • Vegetable or canola oil (for frying)

Instructions

  1. Whisk together flour, sugar, baking powder, cinnamon, ginger, salt, and nutmeg in a bowl.
  2. Combine heavy cream, yogurt, and egg in another bowl.
  3. Gradually mix wet and dry ingredients, then gently fold in diced peaches.
  4. Form batter into 1-inch balls and flatten slightly with a fork.
  5. Heat oil in a pan over medium (350°F/175°C). Fry fritters 1-2 minutes per side until golden.
  6. Drizzle glaze using reserved peach juice (mix 2 tbsp juice with 1 tbsp sugar and a splash of oil if available).
