- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- Pinch of nutmeg
- 1/4 cup heavy whipping cream
- 3 oz vanilla yogurt
- 1 large egg
- 1 can (15 oz) peaches, diced (reserve juice for glaze)
- Vegetable or canola oil (for frying)
Instructions
- Whisk together flour, sugar, baking powder, cinnamon, ginger, salt, and nutmeg in a bowl.
- Combine heavy cream, yogurt, and egg in another bowl.
- Gradually mix wet and dry ingredients, then gently fold in diced peaches.
- Form batter into 1-inch balls and flatten slightly with a fork.
- Heat oil in a pan over medium (350°F/175°C). Fry fritters 1-2 minutes per side until golden.
- Drizzle glaze using reserved peach juice (mix 2 tbsp juice with 1 tbsp sugar and a splash of oil if available).
