- 2 cups All-purpose flour
- 1 cup Granulated sugar
- 2 teaspoons Baking powder
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 cup Milk (dairy or dairy-free)
- 1/2 cup Unsalted butter (melted)
- 2 large Eggs
- 1 teaspoon Vanilla extract
- 2 cups Peaches (fresh or canned, diced and drained)
- 1 teaspoon Ground cinnamon
- 1/4 cup Brown sugar
Instructions
- Preheat your oven to 350°F (175°C), and prepare your muffin tin by lining it with paper liners or giving it a light grease.
- Whisk together all the dry ingredients in a large bowl: combine flour, granulated sugar, baking powder, baking soda, and salt until well-mixed.
- Combine the wet ingredients in a separate bowl by whisking the milk, melted butter, eggs, and vanilla until smooth.
- Mix the wet ingredients with the dry ingredients, stirring gently; be careful not to overmix.
- Fold in the diced peaches gently, ensuring they are evenly distributed throughout the batter.
- Spoon the batter into the muffin cups, filling them about two-thirds full.
- Combine the brown sugar and cinnamon in a small bowl, then sprinkle generously over each muffin.
- Bake the muffins for 18–20 minutes, or until golden brown and a toothpick inserted comes out clean.
- Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
