Ingredients

  • 1 cup Milk (dairy or dairy-free)
  • 1/2 cup Unsalted butter (melted)
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 2 cups Peaches (fresh or canned, diced and drained)
  • 1 teaspoon Ground cinnamon
  • 1/4 cup Brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C), and prepare your muffin tin by lining it with paper liners or giving it a light grease.
  2. Whisk together all the dry ingredients in a large bowl: combine flour, granulated sugar, baking powder, baking soda, and salt until well-mixed.
  3. Combine the wet ingredients in a separate bowl by whisking the milk, melted butter, eggs, and vanilla until smooth.
  4. Mix the wet ingredients with the dry ingredients, stirring gently; be careful not to overmix.
  5. Fold in the diced peaches gently, ensuring they are evenly distributed throughout the batter.
  6. Spoon the batter into the muffin cups, filling them about two-thirds full.
  7. Combine the brown sugar and cinnamon in a small bowl, then sprinkle generously over each muffin.
  8. Bake the muffins for 18–20 minutes, or until golden brown and a toothpick inserted comes out clean.
  9. Cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
