- 2 cups peaches, peeled and diced
- 1 tablespoon butter
- 1 tablespoon brown sugar
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch

- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 10 egg roll wrappers
- Vegetable oil for frying
- 1/4 cup cinnamon sugar (3 tablespoons granulated sugar and 1 tablespoon ground cinnamon, mixed together)
Instructions
- Prepare the peach filling: Melt butter in a saucepan, add diced peaches, brown sugar, and cinnamon. Cook for 5-7 minutes until peaches soften. If desired, thicken with a cornstarch and water slurry. Stir in 1 teaspoon vanilla extract and let cool completely.
- Create the cream cheese layer: In a bowl, beat softened cream cheese with powdered sugar and 1 teaspoon vanilla extract until smooth and creamy.
- Assemble the rolls: Lay an egg roll wrapper like a diamond. Spread a tablespoon of cooled peach filling on the bottom third, leaving a border. Dollop a tablespoon of cream cheese mixture on top. Fold the bottom corner up, then the sides in, and tightly roll upwards, sealing the top corner with water.
- Fry the rolls: Heat vegetable oil in a pot to 350°F (175°C). Fry 2-3 rolls at a time for 2-3 minutes per side until golden brown. Remove and drain on a wire rack.
- Coat with cinnamon sugar: While still warm, gently roll the fried rolls in the cinnamon sugar mixture. Serve immediately.
