- 2 cups Fresh Sweet Peas (or frozen peas as a substitute)
- 1 cup Feta Cheese (crumbled, or goat cheese for a twist)
- 1/4 cup Fresh Mint Leaves (or parsley for a milder flavor)
- 2 tablespoons Lemon Juice (freshly squeezed)
- 3 tablespoons Extra Virgin Olive Oil

Instructions
- Bring a pot of salted water to a rolling boil over high heat. Add the fresh sweet peas and cook for 2-3 minutes until tender yet firm.
- Drain the peas and quickly rinse them under cold water to stop the cooking process. Spread them on a towel to absorb excess moisture.
- In a large mixing bowl, combine the cooled peas with crumbled feta cheese, chopped mint leaves, lemon juice, and olive oil.
- Gently toss the mixture until well coated. Season with salt and pepper to taste.
- Transfer the salad to a serving dish or serve directly from the bowl for a casual presentation.
- Store any leftovers in an airtight container in the refrigerator for up to 4 days.
