Ingredients

  • 3 tablespoons mayonnaise
  • 1 teaspoon mustard
  • 1 teaspoon vinegar
  • Salt and pepper to taste
  • Red and blue food coloring
  • Water and a splash of vinegar (for coloring)

Instructions

  1. Place eggs in a saucepan and cover with water. Bring to a boil, then simmer for 10–12 minutes. Transfer to ice water, cool completely, then peel.
  2. Slice eggs in half and carefully remove yolks. Set yolks aside.
  3. Place egg whites into separate bowls with water, a splash of vinegar, and food coloring. Let soak until desired color is achieved, then remove and pat dry.
  4. Mash egg yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth and creamy.
  5. Pipe or spoon the filling back into the colored egg whites and arrange on a serving platter.
