Ultimate Parmesan Spinach Mushroom Pasta Skillet Recipe

- 10 ounces farfalle (bowtie pasta) about 4 cups (regular or gluten-free)
- to taste salt for pasta water
- 2 tablespoons olive oil
- 1 tablespoon butter
- 1 cup diced yellow onion
- 2 teaspoons minced garlic
- 16 ounces cremini mushrooms, cleaned and sliced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/2 cup low-sodium vegetable broth
- 3/4 cup shredded parmesan cheese or a vegetarian, plant-based hard cheese, divided
- 1/2 cup half and half or heavy cream
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon red pepper flakes or to taste
- 5 ounces fresh baby spinach
Instructions
- Add the farfalle pasta and cook according to package directions until al dente, usually 10–12 minutes. Drain and set aside, reserving 1/2 cup of the starchy pasta water just in case you need to thin the sauce later.
- Once the butter melts and starts to foam, add the diced onion and cook for 3–4 minutes until softened and translucent. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Let them cook undisturbed for 3–4 minutes to develop a golden-brown crust, then stir and continue cooking for another 2–3 minutes until they’ve released their moisture and are caramelized. Season with kosher salt and black pepper.
- Let it simmer for 2–3 minutes until slightly reduced.
- Whisk gently until the cheese melts completely and the sauce becomes smooth and creamy, about 2–3 minutes.
- If the sauce seems too thick, add a splash of the reserved pasta water to reach your desired consistency.
- Toss everything together until the spinach wilts completely and turns bright green, about 1–2 minutes.
- Top each serving with the remaining parmesan cheese and extra red pepper flakes if desired. This dish is best enjoyed hot when the sauce is silkiest.
