Description

A delicious and easy recipe for an overnight croissant breakfast casserole, perfect for brunch.


Ingredients

  • 1 tbsp olive oil
  • 1 small onion, peeled and chopped
  • 1 lb breakfast sausage, mild flavor
  • 4 large butter croissants (or 8 small croissants)
  • 1 c shredded cheddar cheese
  • 6 large eggs
  • 1/2 c heavy whipping cream
  • 3 c whole milk, divided
  • 1/2 tsp dry mustard powder
  • 1/2 tsp salt (plus additional for the gravy to taste)
  • 1/2 tsp black pepper (plus additional for the gravy to taste)
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • 2 tbsp butter
  • 3 tbsp all-purpose flour

Instructions

  1. Heat olive oil in a skillet, add chopped onions and sauté until soft and translucent.
  2. Add breakfast sausage to the skillet and cook until browned, draining fat but reserving some for gravy.
  3. Allow sausage mixture to cool slightly.
  4. Tear croissants into pieces and combine with sausage mixture and cheese in a bowl.
  5. Spread mixture in a greased 9×13-inch baking dish.
  6. In another bowl, whisk together eggs, heavy cream, 1/2 cup milk, and spices, then pour over the croissant mixture.
  7. Cover and refrigerate overnight.
  8. Preheat oven to 350°F (175°C) the next day.
  9. Bake casserole for 35 to 45 minutes until browned on top.
  10. While baking, make the gravy by melting butter and reserved fat, stirring in flour, then gradually adding 2 ½ cups of milk until thickened. Season with salt and pepper.
  11. Serve casserole hot alongside gravy.
