A delicious and easy recipe for an overnight croissant breakfast casserole, perfect for brunch.
Ingredients

- 1 tbsp olive oil
- 1 small onion, peeled and chopped
- 1 lb breakfast sausage, mild flavor
- 4 large butter croissants (or 8 small croissants)
- 1 c shredded cheddar cheese
- 6 large eggs
- 1/2 c heavy whipping cream
- 3 c whole milk, divided
- 1/2 tsp dry mustard powder
- 1/2 tsp salt (plus additional for the gravy to taste)
- 1/2 tsp black pepper (plus additional for the gravy to taste)
- 1/4 tsp paprika
- 1/4 tsp garlic powder
- 2 tbsp butter
- 3 tbsp all-purpose flour
Instructions
- Heat olive oil in a skillet, add chopped onions and sauté until soft and translucent.
- Add breakfast sausage to the skillet and cook until browned, draining fat but reserving some for gravy.
- Allow sausage mixture to cool slightly.
- Tear croissants into pieces and combine with sausage mixture and cheese in a bowl.
- Spread mixture in a greased 9×13-inch baking dish.
- In another bowl, whisk together eggs, heavy cream, 1/2 cup milk, and spices, then pour over the croissant mixture.
- Cover and refrigerate overnight.
- Preheat oven to 350°F (175°C) the next day.
- Bake casserole for 35 to 45 minutes until browned on top.
- While baking, make the gravy by melting butter and reserved fat, stirring in flour, then gradually adding 2 ½ cups of milk until thickened. Season with salt and pepper.
- Serve casserole hot alongside gravy.
