Delicious Oat Applesauce Muffins for a Healthy Morning Boost

Ingredients

Scale
  • 1 cup Quick-Cook Oats
  • 1 cup Whole Wheat Flour
  • 0.5 cup Granulated Sugar
  • 1 tbsp Baking Powder
  • 0.5 tsp Baking Soda
  • 0.25 tsp Ground Nutmeg
  • 1 tsp Ground Cinnamon
  • 0.5 tsp Table Salt
  • 1 cup Unsweetened Applesauce
  • 0.5 cup Milk
  • 0.25 cup Unsalted Butter (melted and cooled)
  • 1 tsp Vanilla Flavoring
  • Dried Fruits (like raisins or cranberries) (optional)
  • Nuts or Seeds (Walnuts or sunflower seeds are excellent)
  • Spices (like cardamom or ginger) (customize flavor)

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners.
  2. In a large mixing bowl, whisk together dry ingredients: oats, flour, sugar, baking powder, baking soda, nutmeg, cinnamon, and salt.
  3. In another bowl, mix wet ingredients: applesauce, milk, melted butter, and vanilla flavoring until combined.
  4. Pour the wet mixture into the dry ingredients and gently fold until just combined; do not overmix.
  5. Spoon the batter into muffin liners, filling each about two-thirds full.
  6. Bake for 23-25 minutes until a toothpick comes out clean or with a few moist crumbs.
  7. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use rolled oats for a heartier texture.
  • Substitute with all-purpose flour for a lighter texture.
  • Reduce sugar or swap for honey/maple syrup.
  • Ensure baking powder is fresh for maximum fluffiness.
  • Mix applesauce at room temperature.
  • Use non-dairy milk for a dairy-free option.
  • Use oil for a dairy-free option instead of butter.
  • Almond extract is a fun twist for flavoring.
