Homemade Mushroom and Cheese Pinwheels


Ingredients

  • 1 sheet puff pastry, thawed
  • 8 oz sliced mushrooms
  • 1 cup shredded cheese (such as cheddar or mozzarella)
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a skillet, sauté the mushrooms in olive oil over medium heat until softened, about 5 minutes. Add the minced garlic and dried thyme, and season with salt and pepper.
  3. Unfold the puff pastry sheet and roll it out into a rectangle, about 12×9 inches.
  4. Spread the sautéed mushroom mixture evenly over the puff pastry, leaving a 1-inch border.
  5. Sprinkle the shredded cheese over the mushrooms.
  6. Starting from the long side, tightly roll up the puff pastry into a log.
  7. Cut the log into 1-inch thick slices and place them on a parchment-lined baking sheet.
  8. Bake for 18-22 minutes, or until the pinwheels are golden brown and the cheese is melted.
  9. Serve hot and enjoy!
