Homemade Mushroom and Cheese Pinwheels

- 1 sheet puff pastry, thawed
- 8 oz sliced mushrooms
- 1 cup shredded cheese (such as cheddar or mozzarella)
- 1 tbsp olive oil
- 1 clove garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a skillet, sauté the mushrooms in olive oil over medium heat until softened, about 5 minutes. Add the minced garlic and dried thyme, and season with salt and pepper.
- Unfold the puff pastry sheet and roll it out into a rectangle, about 12×9 inches.
- Spread the sautéed mushroom mixture evenly over the puff pastry, leaving a 1-inch border.
- Sprinkle the shredded cheese over the mushrooms.
- Starting from the long side, tightly roll up the puff pastry into a log.
- Cut the log into 1-inch thick slices and place them on a parchment-lined baking sheet.
- Bake for 18-22 minutes, or until the pinwheels are golden brown and the cheese is melted.
- Serve hot and enjoy!
