- 1 pound ground beef
- 2 cups sweet potatoes, peeled and diced
- 2 cups cooked white rice
- 1 cup cottage cheese
- 1 avocado, diced
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 teaspoon chili powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 425°F.
- Toss the diced sweet potatoes with olive oil, 1/2 teaspoon garlic powder, 1/2 teaspoon smoked paprika, 1/4 teaspoon salt, and black pepper.
- Spread the sweet potatoes on a baking sheet and roast for 22 to 25 minutes, stirring once, until tender and lightly browned.
- While the sweet potatoes roast, heat a skillet over medium heat and add the ground beef.
- Cook the beef until browned, breaking it apart as it cooks, then drain any excess grease.
- Stir in the remaining garlic powder, remaining smoked paprika, chili powder, onion powder, and remaining salt.
- Cook the beef for 2 more minutes so the seasonings coat the meat well.
- Divide the warm cooked rice between 4 bowls.
- Top each bowl with seasoned ground beef, roasted sweet potatoes, cottage cheese, and diced avocado.
- Finish with chopped parsley and serve immediately.
