- 2 teaspoons baking soda
- ½ tablespoon ground ginger

- ¾ cup unsalted butter, softened to room temperature
- ¼ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- ⅓ cup molasses
- 1 teaspoon vanilla extract
- ¼ cup coarse sugar or granulated sugar
Instructions
- Preheat your oven to 350°F (175°C). Line a half sheet baking pan with parchment paper or a silicone baking mat.
- In a medium mixing bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, nutmeg, and salt. Set aside.
- Cream the butter with granulated sugar and brown sugar until light and fluffy, about 2 minutes.
- Beat in the egg until fully incorporated. Add the molasses and vanilla extract, mixing on low speed.
- Gradually add the dry ingredients to the wet mixture, beating just until combined.
- Scoop out 1-2 tablespoons of dough, roll into a ball, and coat in coarse sugar. Place on the prepared baking sheet spaced 2-3 inches apart.
- Bake for 8-10 minutes until edges are set but centers remain soft. Cool on baking sheet for 5 minutes before transferring to a wire rack.
Notes
- For a more crinkled top, gently tap the baking sheet on the counter after baking.
- Store cookies in an airtight container to maintain softness.
