- 1 cup mayonnaise
- 2/3 cup sour cream
- 3 tablespoons lime juice
- 2 tablespoons taco seasoning
- 1 (16 oz) bag tri-color coleslaw mix
- 1 red bell pepper, diced
- 1 1/2 cups grape tomatoes, halved
- 1 (15 oz) can black beans, drained and rinsed
- 1 1/2 cups grilled or blackened corn
- 1 jalapeño, seeded and minced
- 1/2 cup fresh cilantro, chopped
- Salt & black pepper to taste
Instructions
- In a small bowl, mix together mayonnaise, sour cream, lime juice, and taco seasoning until smooth. Set aside.
- In a large bowl, combine coleslaw mix, diced red bell pepper, halved grape tomatoes, drained black beans, grilled corn, minced jalapeño, and chopped cilantro.
- Pour the dressing over the salad mixture and gently toss until evenly coated.
- Season with salt and black pepper to taste.
