Ingredients
- 900 g ground chicken
- 100 g grated Parmesan cheese
- 60 g panko breadcrumbs
- 2 large eggs
- 4 garlic cloves, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp dried basil
- 0.5 tsp dried parsley
- 0.5 tsp fine salt
- 0.5 tsp ground black pepper
- 60 ml whole milk
- 45 g unsalted butter
- 2 garlic cloves, minced (for glaze)
- 25 g grated Parmesan cheese (for glaze)
- 1 tbsp finely chopped parsley (for glaze)
- Pinch of fine salt (for glaze)
Instructions
- Preheat your oven to 190°C (375°F). Line a baking sheet with parchment paper or lightly grease a loaf pan.
- In a large bowl, combine ground chicken, grated Parmesan, panko breadcrumbs, eggs, minced garlic, garlic powder, onion powder, dried basil, dried parsley, salt, black pepper, and whole milk. Mix well but avoid overmixing.
- Shape the mixture into a uniform loaf and place it on the prepared baking sheet or into the loaf pan.
- Bake for 40 to 45 minutes, or until the internal temperature reaches 74°C (165°F).
- While the meatloaf bakes, melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Stir in Parmesan cheese and chopped parsley, cook for another 1-2 minutes until slightly thickened. Season with salt.
- Brush the glaze generously over the baked meatloaf. Return to the oven for an additional 5-7 minutes.
- Let the meatloaf rest for 5 minutes before slicing and serving. Garnish with fresh parsley if desired.
