- 500 g ground beef (or mix beef + turkey)
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic (minced)
- 2 tbsp fresh parsley (chopped or 1 tsp dried)
- ½ tsp salt
- ¼ tsp black pepper
- 2 cups marinara sauce (store-bought or homemade)
- 1 tbsp olive oil
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- ½ tsp dried oregano (optional)
- 4 sub rolls (hoagie-style)
- 1 to 1½ cups shredded mozzarella cheese
- 2 tbsp butter (optional, for toasting bread)
Instructions
- Prepare the Meatballs
- In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper.
- Mix gently until just combined (don’t overwork).
- Shape into small meatballs (about golf-ball size).
- Cook the Meatballs
- Heat a pan over medium heat with a little oil.
- Brown meatballs on all sides (about 6–8 minutes).
- They don’t need to be fully cooked yet—they’ll finish in the sauce.
- Make the Sauce
- In the same pan, add olive oil, onion, and garlic.
- Cook until soft and fragrant (about 3–4 minutes).
- Pour in marinara sauce and add oregano if using.
- Return meatballs to the sauce.
- Simmer for 10–15 minutes until fully cooked and tender.
- Prepare the Bread
- Slice sub rolls and lightly butter them (optional).
- Toast in the oven or pan until slightly crisp.
- Assemble the Subs
- Place 3–4 meatballs inside each roll.
- Spoon extra sauce over the top.
- Sprinkle generously with mozzarella cheese.
- Melt & Serve
- Place subs in the oven at 375°F (190°C) for 5–7 minutes until cheese melts and bubbles.
- Serve hot.
