Ingredients

Scale
  • 500 g ground beef (or mix beef + turkey)
  • ½ cup breadcrumbs
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic (minced)
  • 2 tbsp fresh parsley (chopped or 1 tsp dried)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups marinara sauce (store-bought or homemade)
  • 1 tbsp olive oil
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • ½ tsp dried oregano (optional)
  • 4 sub rolls (hoagie-style)
  • 1 to cups shredded mozzarella cheese
  • 2 tbsp butter (optional, for toasting bread)

Instructions

  1. Prepare the Meatballs
  2. In a bowl, combine ground beef, breadcrumbs, Parmesan, egg, garlic, parsley, salt, and pepper.
  3. Mix gently until just combined (don’t overwork).
  4. Shape into small meatballs (about golf-ball size).
  5. Cook the Meatballs
  6. Heat a pan over medium heat with a little oil.
  7. Brown meatballs on all sides (about 6–8 minutes).
  8. They don’t need to be fully cooked yet—they’ll finish in the sauce.
  9. Make the Sauce
  10. In the same pan, add olive oil, onion, and garlic.
  11. Cook until soft and fragrant (about 3–4 minutes).
  12. Pour in marinara sauce and add oregano if using.
  13. Return meatballs to the sauce.
  14. Simmer for 10–15 minutes until fully cooked and tender.
  15. Prepare the Bread
  16. Slice sub rolls and lightly butter them (optional).
  17. Toast in the oven or pan until slightly crisp.
  18. Assemble the Subs
  19. Place 3–4 meatballs inside each roll.
  20. Spoon extra sauce over the top.
  21. Sprinkle generously with mozzarella cheese.
  22. Melt & Serve
  23. Place subs in the oven at 375°F (190°C) for 5–7 minutes until cheese melts and bubbles.
  24. Serve hot.
