- 2 pieces Chicken Breasts
- 8 oz Cream Cheese
- 1/2 cup Heavy Cream
- 1/2 cup Sun-Dried Tomatoes
- 1 cup Spinach
- 2 cloves Garlic
- 1 teaspoon Italian Seasoning
- 1 sheet Puff Pastry
- 1 egg Egg (for wash)
- 1 tablespoon Olive Oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet over medium heat, warm 1 tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant, then incorporate spinach and cook for 2-3 minutes until wilted.
- In a mixing bowl, combine the sautéed spinach and garlic with cream cheese, heavy cream, sun-dried tomatoes, and Italian seasoning. Stir until smooth.
- Flatten the chicken breasts to an even thickness of about 1 inch. Spread a layer of the creamy filling on each chicken breast.
- Roll each chicken breast tightly to encase the filling completely and secure with toothpicks if necessary.
- Roll out the chilled puff pastry and place the rolled chicken in the center. Wrap it up and seal the edges firmly.
- Transfer the wrapped chicken to a baking sheet. Beat one egg and brush it over the pastry. Cut slits for steam to escape.
- Bake for 25-30 minutes until the pastry is puffed and golden brown, and the chicken reaches 165°F (75°C).
