  • 1/2 cup Sun-Dried Tomatoes

  • 1 teaspoon Italian Seasoning
  • 1 sheet Puff Pastry
  • 1 egg Egg (for wash)
  • 1 tablespoon Olive Oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, warm 1 tablespoon of olive oil. Add minced garlic and sauté for about 1 minute until fragrant, then incorporate spinach and cook for 2-3 minutes until wilted.
  3. In a mixing bowl, combine the sautéed spinach and garlic with cream cheese, heavy cream, sun-dried tomatoes, and Italian seasoning. Stir until smooth.
  4. Flatten the chicken breasts to an even thickness of about 1 inch. Spread a layer of the creamy filling on each chicken breast.
  5. Roll each chicken breast tightly to encase the filling completely and secure with toothpicks if necessary.
  6. Roll out the chilled puff pastry and place the rolled chicken in the center. Wrap it up and seal the edges firmly.
  7. Transfer the wrapped chicken to a baking sheet. Beat one egg and brush it over the pastry. Cut slits for steam to escape.
