- 8 oz mozzarella cheese (cut into cubes)
- 4 oz cheddar cheese (cut into cubes)
- 4 oz salami (sliced into bite-sized pieces)
- 1 cup pickles (sliced or whole)
- ½ cup extra virgin olive oil
- ¼ cup red wine vinegar
- 2 cloves garlic (minced)
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp crushed red pepper flakes (optional)
- Salt and pepper to taste
- Fresh parsley (chopped for garnish)
Instructions
- In a mixing bowl, combine the olive oil, red wine vinegar, minced garlic, oregano, basil, crushed red pepper flakes, salt, and pepper. Whisk together until well combined.
- In a large, sealable container or jar, layer the mozzarella cheese cubes, cheddar cheese cubes, salami pieces, and pickles.
- Pour the marinade over the layered ingredients, ensuring everything is well coated.
- Seal the container or jar tightly and refrigerate for at least 2 hours, preferably overnight.
- Before serving, give the mixture a gentle toss to redistribute the marinade.
- Transfer the marinated cheese, salami, and pickles to a serving platter, and garnish with freshly chopped parsley.
