  • 2 cups Jasmine Rice (Cooked)
  • 1 medium Mango (Diced, ripe)
  • 1 can Chickpeas (Drained)
  • 4 stalks Green Onion (Chopped)
  • 1 medium Red Pepper (Diced, optional)
  • 3 tablespoons Soy Sauce (Or tamari for gluten-free)
  • 1 tablespoon Rice Vinegar
  • 3 cloves Garlic (Minced)
  • 1 inch Ginger (Minced)
  • 2 tablespoons Toasted Sesame Oil

Instructions

  1. Heat 2 tablespoons of toasted sesame oil in a large pan or wok over medium heat.
  2. Add diced onion, minced garlic, ginger, and red pepper; sauté for about 5 minutes until the onion turns translucent.
  3. Increase heat to high. Add cooked jasmine rice, drained chickpeas, chopped green onion, soy sauce, and rice vinegar. Stir well to combine.
  4. Cook while stirring occasionally for about 3-4 minutes until the bottom of the rice crisps slightly.
  5. Lower the heat to medium and stir in the diced mango, cooking for an additional minute.
  6. Serve with a squeeze of fresh lime juice and garnish with extra green onion.
