- 2 cups Jasmine Rice (Cooked)
- 1 medium Mango (Diced, ripe)
- 1 can Chickpeas (Drained)
- 4 stalks Green Onion (Chopped)
- 1 medium Red Pepper (Diced, optional)
- 3 tablespoons Soy Sauce (Or tamari for gluten-free)
- 1 tablespoon Rice Vinegar
- 3 cloves Garlic (Minced)
- 1 inch Ginger (Minced)
- 2 tablespoons Toasted Sesame Oil
Instructions
- Heat 2 tablespoons of toasted sesame oil in a large pan or wok over medium heat.
- Add diced onion, minced garlic, ginger, and red pepper; sauté for about 5 minutes until the onion turns translucent.
- Increase heat to high. Add cooked jasmine rice, drained chickpeas, chopped green onion, soy sauce, and rice vinegar. Stir well to combine.
- Cook while stirring occasionally for about 3-4 minutes until the bottom of the rice crisps slightly.
- Lower the heat to medium and stir in the diced mango, cooking for an additional minute.
- Serve with a squeeze of fresh lime juice and garnish with extra green onion.
