  • 1 cup Unsalted Butter (softened)
  • 3.5 cups Powdered Sugar
  • 3 tbsp Lemon Curd
  • 1 tbsp Additional Lemon Zest
  • 2 tsp Cream or Milk
  • 0.25 tsp Kosher Salt

Instructions

  1. In a medium saucepan, combine egg yolks with granulated sugar, lemon zest, and lemon juice. Whisk until smooth. Cook over low heat, stirring constantly for about 15 minutes until thickened. Remove from heat and cool for 20 minutes.
  2. In a large mixing bowl, beat the softened butter on medium speed for about 3 minutes until creamy and fluffy.
  3. Gradually sift in the powdered sugar while continuing to beat on low speed for about 2-3 minutes until fully absorbed.
  4. Add the cooled lemon curd, additional lemon zest, and cream to the bowl. Mix on low speed for 1-2 minutes.
  5. Check the frosting’s texture. If thicker, gradually add powdered sugar; for a lighter texture, fold in whipped cream.
  6. If the frosting is too soft, store in an airtight container and refrigerate for up to 4 days.
