- 4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves garlic, minced
- 1/2 cup freshly squeezed lemon juice
- 1/2 cup grated Parmesan cheese
- 3 tbsp extra virgin olive oil
- 2 tsp Italian seasoning
- 1 cup low-sodium chicken broth
- 1 tbsp cornstarch mixed with 2 tbsp cold water
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Chop parsley, mince garlic, and juice lemons before starting the recipe.
- Season both sides of chicken breasts with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat. Sear chicken for 6–7 minutes per side until golden brown and cooked through.
- Add minced garlic and sauté for 30 seconds. Pour in chicken broth and simmer for 5 minutes.
- Stir in cornstarch slurry and cook 2–3 minutes until sauce thickens slightly.
- Add fresh lemon juice and Parmesan cheese. Stir until melted and creamy.
- Return chicken to the pan, coat with sauce, garnish with parsley, and serve hot.
