- 1 ½ cups (150g) graham cracker crumbs
- ¼ cup (50g) granulated sugar
- 6 tbsp (85g) unsalted butter, melted
- ½ cup (115g) unsalted butter, melted and slightly cooled
- 1 cup (200g) granulated sugar
- 3 large eggs (room temperature)
- ¼ cup (60 ml) fresh lemon juice
- 1 tbsp lemon zest (about 1–2 lemons)
- 2 tbsp all-purpose flour
- ¼ tsp salt
- 1 tsp vanilla extract
- Powdered sugar (for dusting)
- Whipped cream
- Lemon slices or zest curls
Instructions
- Prepare the Crust
- Preheat oven to 350°F (175°C).
- In a bowl, mix graham crumbs, sugar, and melted butter until evenly coated.
- Press firmly into a 9-inch pie dish, covering the bottom and sides.
- Bake for 8–10 minutes, then set aside to cool slightly.
- Make the Lemon Butter Filling
- In a large bowl, whisk together sugar and melted butter until smooth.
- Add eggs one at a time, whisking well after each addition.
- Stir in lemon juice, zest, and vanilla.
- Add flour and salt, and mix until fully combined (smooth but slightly thick).
- Assemble & Bake
- Pour the filling into the pre-baked crust.
- Bake at 350°F (175°C) for 30–35 minutes.
- The center should be just set with a slight jiggle.
- Cool & Set
- Allow the pie to cool at room temperature.
- Refrigerate for at least 2 hours before slicing.
- Serve
- Dust with powdered sugar or top with whipped cream.
- Garnish with lemon zest or thin lemon slices if desired.
