  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) granulated sugar
  • 3 large eggs (room temperature)
  • ¼ cup (60 ml) fresh lemon juice
  • 1 tbsp lemon zest (about 12 lemons)
  • 2 tbsp all-purpose flour
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • Powdered sugar (for dusting)
  • Whipped cream
  • Lemon slices or zest curls

Instructions

  1. Prepare the Crust
  2. Preheat oven to 350°F (175°C).
  3. In a bowl, mix graham crumbs, sugar, and melted butter until evenly coated.
  4. Press firmly into a 9-inch pie dish, covering the bottom and sides.
  5. Bake for 8–10 minutes, then set aside to cool slightly.
  6. Make the Lemon Butter Filling
  7. In a large bowl, whisk together sugar and melted butter until smooth.
  8. Add eggs one at a time, whisking well after each addition.
  9. Stir in lemon juice, zest, and vanilla.
  10. Add flour and salt, and mix until fully combined (smooth but slightly thick).
  11. Assemble & Bake
  12. Pour the filling into the pre-baked crust.
  13. Bake at 350°F (175°C) for 30–35 minutes.
  14. The center should be just set with a slight jiggle.
  15. Cool & Set
  16. Allow the pie to cool at room temperature.
  17. Refrigerate for at least 2 hours before slicing.
  18. Serve
  19. Dust with powdered sugar or top with whipped cream.
  20. Garnish with lemon zest or thin lemon slices if desired.
