Description

  • ½ cup reduced sodium soy sauce
  • ½ cup brown sugar

  • 1 tablespoon rice wine vinegar

  • ¼ teaspoon fresh ground black pepper
  • 1 teaspoon hot sauce, or to taste
  • 3 pounds boneless beef chuck, cut into 3 to 4 chunks
  • 2 tablespoons cornstarch
  • ¼ cup water
  • 1 large onion, thinly sliced
  • 8 to 10 flour tortillas
  • ½ cup sour cream
  • 3 cups lettuce
  • 1 carrot, shredded
  • 1 cup shredded red cabbage

Instructions

  1. In a large bowl, whisk together beef broth, reduced sodium soy sauce, brown sugar, minced garlic, sesame oil, rice wine vinegar, ground ginger, hot sauce, and fresh ground black pepper until well combined.
  2. Place the beef chuck pieces and sliced onion in the slow cooker. Pour the prepared sauce mixture over the meat and onions, stirring gently to combine everyone thoroughly.
  3. Cover the slow cooker and cook on low heat for 7 to 8 hours, or on high heat for 3 to 4 hours. The beef should become very tender while still holding its shape.
  4. In a small bowl, whisk cornstarch and water together to create a slurry. Stir this slurry into the slow cooker and continue cooking for an additional 30 minutes, allowing the sauce to thicken to a glossy consistency.
  5. Carefully remove the beef from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker and stir to coat it evenly with the thickened sauce.
  6. Warm the flour tortillas lightly, then spread about a tablespoon of sour cream onto each one.
  7. Layer each tortilla with lettuce, shredded carrots, and shredded red cabbage to add fresh crunch and color.
  8. Top the vegetable layers with the tender Korean BBQ beef mixture. Serve the tacos immediately to enjoy the full contrast of textures and flavors.
