- In a microwave-safe bowl, melt the mozzarella and cream cheese together for 1-2 minutes, stirring halfway to achieve a smooth, creamy mixture.
- Stir in the beaten eggs, almond flour, and baking powder, combining everything until a soft and cohesive dough forms.
- Wrap the dough tightly and refrigerate it for at least 4 hours; this step is essential for easy shaping later.
- Once chilled, divide the dough into 8 equal balls, then flatten each ball between parchment paper to about ¼ inch thick.
- Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
