- 4 chicken breast cutlets
- 8 canned pineapple rings
- 2/3 cup pineapple juice
- 3 tbsp canola or vegetable oil
- 1/3 cup soy sauce
- 1 tsp salt
- 2 tbsp brown sugar
- 1/4 cup dijon mustard
- 2 tsp hot sauce
- 4 slices provolone cheese
- 6 tsp mayo
- 4 kaiser rolls
Instructions
- Mix the pineapple juice, canola oil, soy sauce, salt, brown sugar, hot sauce, and dijon mustard in a bowl until well combined.
- Place the chicken cutlets in a large sealable bag and pour the marinade over them. Seal the bag and let the chicken marinate in the refrigerator for at least 4 hours.
- Preheat your grill to medium heat. Once heated, remove the chicken from the marinade and discard the marinade.
- Grill the chicken for 4-5 minutes per side, while grilling the pineapple rings after flipping the chicken.
- Ensure that the chicken has reached an internal temperature of 165°F, placing a slice of provolone cheese on each cutlet about a minute before removing them from the grill.
- Remove both the chicken and pineapple from the grill, spread mayo on each side of the kaiser rolls, and stack the grilled chicken topped with pineapple on each bun.
- Serve immediately and enjoy this taste of the islands!
