Description

Ingredients

  • 4 chicken breast cutlets
  • 8 canned pineapple rings
  • 2/3 cup pineapple juice
  • 3 tbsp canola or vegetable oil
  • 1/3 cup soy sauce
  • 1 tsp salt
  • 2 tbsp brown sugar
  • 1/4 cup dijon mustard
  • 2 tsp hot sauce
  • 4 slices provolone cheese
  • 6 tsp mayo
  • 4 kaiser rolls

Instructions

  1. Mix the pineapple juice, canola oil, soy sauce, salt, brown sugar, hot sauce, and dijon mustard in a bowl until well combined.
  2. Place the chicken cutlets in a large sealable bag and pour the marinade over them. Seal the bag and let the chicken marinate in the refrigerator for at least 4 hours.
  3. Preheat your grill to medium heat. Once heated, remove the chicken from the marinade and discard the marinade.
  4. Grill the chicken for 4-5 minutes per side, while grilling the pineapple rings after flipping the chicken.
  5. Ensure that the chicken has reached an internal temperature of 165°F, placing a slice of provolone cheese on each cutlet about a minute before removing them from the grill.
  6. Remove both the chicken and pineapple from the grill, spread mayo on each side of the kaiser rolls, and stack the grilled chicken topped with pineapple on each bun.
  7. Serve immediately and enjoy this taste of the islands!
