- 2 medium ripe pears
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- 1/2 cup milk
- 2 tablespoons powdered sugar
Instructions
- Preheat the oven to 350°F and grease an 8-inch or 9-inch round cake pan. Line the bottom with parchment paper.
- Peel the pears, cut them in half, and remove the cores. Set them aside.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest.
- Add the dry ingredients in batches, alternating with the milk, and mix just until combined.
- Spread the batter into the prepared pan and gently press the pear halves into the batter.
- Bake for 40 to 50 minutes, or until the cake is golden and a toothpick inserted into the cake comes out clean.
- Cool the cake for 10 to 15 minutes, then remove from the pan and let it cool completely.
- Dust with powdered sugar before serving.
