- 1 pound fresh green beans (trimmed and cut into 2-inch pieces)
- 1 cup sliced mushrooms (button or cremini)
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1 cup heavy cream
- 1 cup vegetable broth
- 1 tablespoon soy sauce
- 1 teaspoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ teaspoon garlic powder
- ¼ teaspoon onion powder
- 1 cup shredded cheddar cheese
- 1 cup panko bread crumbs
- 2 tablespoons unsalted butter (melted)
- 1 tablespoon fresh parsley (chopped for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring salted water to a boil. Add the green beans and blanch for about 5 minutes until bright green and slightly tender. Drain and set aside.
- In a large skillet over medium heat, melt 1 tablespoon of butter. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the sliced mushrooms and garlic, cooking until the mushrooms are tender and their moisture has evaporated, about 5 minutes.
- In a mixing bowl, whisk together the heavy cream, vegetable broth, soy sauce, Worcestershire sauce, Dijon mustard, salt, pepper, garlic powder, and onion powder.
- In the skillet with the sautéed vegetables, add the blanched green beans and the creamy sauce. Stir in the shredded cheddar cheese until well combined.
- Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
- In a small bowl, combine the panko bread crumbs with the melted butter. Mix until the bread crumbs are well coated.
- Sprinkle the bread crumb mixture evenly over the green bean casserole.
- Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the sauce is bubbling.
