  • 1 pound fresh green beans (trimmed and cut into 2-inch pieces)
  • 1 cup sliced mushrooms (button or cremini)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 cup shredded cheddar cheese
  • 1 cup panko bread crumbs
  • 2 tablespoons unsalted butter (melted)
  • 1 tablespoon fresh parsley (chopped for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring salted water to a boil. Add the green beans and blanch for about 5 minutes until bright green and slightly tender. Drain and set aside.
  3. In a large skillet over medium heat, melt 1 tablespoon of butter. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the sliced mushrooms and garlic, cooking until the mushrooms are tender and their moisture has evaporated, about 5 minutes.
  5. In a mixing bowl, whisk together the heavy cream, vegetable broth, soy sauce, Worcestershire sauce, Dijon mustard, salt, pepper, garlic powder, and onion powder.
  6. In the skillet with the sautéed vegetables, add the blanched green beans and the creamy sauce. Stir in the shredded cheddar cheese until well combined.
  7. Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
  8. In a small bowl, combine the panko bread crumbs with the melted butter. Mix until the bread crumbs are well coated.
  9. Sprinkle the bread crumb mixture evenly over the green bean casserole.
  10. Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the sauce is bubbling.
