Description

Ingredients

  • 4 large sweet potatoes, peeled and cut into large pieces
  • 1 cup light brown sugar
  • ½ cup butter, melted
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg
  • 10 oz mini marshmallows

Instructions

  1. Peeled and cut sweet potatoes into large chunks. Place in a large saucepan and cover with water.
  2. Bring to a boil and cook until tender and easily pierced with a fork.
  3. Drain and return to saucepan. Mash thoroughly.
  4. Add melted butter, brown sugar, salt, cinnamon, vanilla extract, and nutmeg. Mix until well combined.
  5. Grease a 9×13-inch baking dish with cooking spray.
  6. Spread sweet potato filling evenly in the dish.
  7. Top with mini marshmallows in an even layer.
  8. Bake in a preheated oven at 350°F for 25-35 minutes, until bubbly and marshmallows are golden brown.
