Ingredients

- 4 large sweet potatoes, peeled and cut into large pieces
- 1 cup light brown sugar
- ½ cup butter, melted
- 1 teaspoon vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon salt
- ¼ teaspoon nutmeg
- 10 oz mini marshmallows
Instructions
- Peeled and cut sweet potatoes into large chunks. Place in a large saucepan and cover with water.
- Bring to a boil and cook until tender and easily pierced with a fork.
- Drain and return to saucepan. Mash thoroughly.
- Add melted butter, brown sugar, salt, cinnamon, vanilla extract, and nutmeg. Mix until well combined.
- Grease a 9×13-inch baking dish with cooking spray.
- Spread sweet potato filling evenly in the dish.
- Top with mini marshmallows in an even layer.
- Bake in a preheated oven at 350°F for 25-35 minutes, until bubbly and marshmallows are golden brown.
