A flavorful and aromatic rice pilaf perfect for holiday gatherings. This dish combines fluffy basmati rice with a mix of warm spices, toasted almonds, and sweet dried cranberries for a festive and irresistible side dish.

- 2 cups basmati rice, rinsed and drained
- 4 cups chicken or vegetable broth
- 1/2 cup chopped onions
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1/2 cup slivered almonds
- 1/2 cup dried cranberries
- 1 tsp ground cumin
- 1 tsp ground cinnamon
- 1/2 tsp ground turmeric
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Rinse the basmati rice under cold water until the water runs clear. Drain well.
- Heat the olive oil in a large pot over medium heat. Add the chopped onions and minced garlic. Sauté until soft, about 3-4 minutes.
- Add the slivered almonds to the pot and toast them until lightly golden and fragrant.
- Stir in the rinsed rice, ground cumin, ground cinnamon, ground turmeric, salt, and pepper. Toast the rice for about 2 minutes, stirring constantly.
- Pour in the chicken or vegetable broth and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove the pot from the heat and let it sit, covered, for 5 minutes.
- Gently fluff the rice with a fork and fold in the dried cranberries.
- Transfer the holiday rice pilaf to a serving dish and garnish with fresh parsley before serving.
Notes
- For a vegetarian version, ensure you use vegetable broth.
- Chopped dried apricots or golden raisins can be substituted for the dried cranberries.
- For extra crunch, toast the almonds separately in a dry skillet until golden before adding them to the pilaf.
