- 2 cups shredded rotisserie chicken
- 2 medium onions (sliced)
- 8 slices cheese (provolone or pepper jack)
- 4 hoagie rolls (toasted)
- 1 cup mushrooms (sliced)
- 1 cup jalapeños (sliced)
- 1 tablespoon olive oil (for cooking)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon salt
Instructions
- Begin by seasoning your chicken with garlic powder, paprika, and salt. Sauté the chicken pieces in olive oil for 5-7 minutes until cooked through and golden.
- In a separate pan, heat olive oil and add sliced onions. Stir for 10-15 minutes until caramelized.
- Return to the chicken skillet, lower heat, and add cheese slices over the chicken. Melt cheese for 3-4 minutes until gooey.
- Preheat oven to 350°F (175°C). Cut hoagie rolls in half and toast in the oven for about 5 minutes until golden.
- Layer the cheesy chicken into hoagie rolls, top with caramelized onions, and optional ingredients, then close the sandwich.
- Serve immediately while hot with a side of fries or salad.
