  • 2 medium onions (sliced)
  • 8 slices cheese (provolone or pepper jack)
  • 4 hoagie rolls (toasted)
  • 1 cup mushrooms (sliced)
  • 1 cup jalapeños (sliced)
  • 1 tablespoon olive oil (for cooking)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon salt

Instructions

  1. Begin by seasoning your chicken with garlic powder, paprika, and salt. Sauté the chicken pieces in olive oil for 5-7 minutes until cooked through and golden.
  2. In a separate pan, heat olive oil and add sliced onions. Stir for 10-15 minutes until caramelized.
  3. Return to the chicken skillet, lower heat, and add cheese slices over the chicken. Melt cheese for 3-4 minutes until gooey.
  4. Preheat oven to 350°F (175°C). Cut hoagie rolls in half and toast in the oven for about 5 minutes until golden.
  5. Layer the cheesy chicken into hoagie rolls, top with caramelized onions, and optional ingredients, then close the sandwich.
