- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, chopped
- 2 stalks celery, chopped
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 2 potatoes, diced
- 1 cup parsnips, chopped
- 1 cup green beans, trimmed and cut
- 1 cup peas
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion, chopped carrots, and celery, allowing them to sauté for about 5 minutes.
- Stir in the minced garlic and let it cook for another minute.
- Pour in the vegetable broth, then toss in the diced potatoes, parsnips, green beans, peas, thyme, and rosemary.
- Raise the heat and bring the mixture to a gentle boil. Once bubbling, reduce the heat back down to a simmer and cook for 25-30 minutes.
- Taste the stew and season with salt and pepper.
- Ladle the stew into warm bowls and finish with a sprinkle of fresh parsley.
