- 200g digestive biscuits
- 100g unsalted butter, melted
- 300g semi-sweet chocolate
- 600g cream cheese
- 150g granulated sugar
- Zest of 2 oranges
- Juice of 2 oranges
- 3 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a food processor, pulse the digestive biscuits until they resemble fine crumbs.
- In a mixing bowl, combine the crumbs with melted butter until fully coated.
- Press the mixture firmly into the bottom of a springform pan, making sure it’s even.
- Bake for about 10 minutes, then remove and let it cool.
- In a microwave-safe bowl, melt the semi-sweet chocolate in 30-second intervals, stirring in between until smooth. Let it cool slightly.
- In a large mixing bowl, beat the cream cheese until smooth.
- Gradually add the granulated sugar, mixing until well combined.
- Add in the orange zest and juice, followed by the melted chocolate, and mix until everything is perfectly blended.
- Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next.
- Pour the cheesecake filling over the cooled crust.
- Bake in the preheated oven for about 50-60 minutes, or until the center is set but still slightly jiggly.
- Once baked, turn off the oven and crack the door open. Allow the cheesecake to cool in the oven for about an hour.
- After it has cooled, refrigerate the cheesecake for at least four hours, or overnight for the best flavor and texture.
