  • 1 ball pizza dough (about 12 oz / 340g), room temperature
  • 8 oz (225g) hot Italian sausage, crumbled
  • 4 oz (115g) feta cheese, crumbled
  • 1 cup shredded mozzarella cheese (about 100g)
  • 2 tablespoons mild, light honey (such as clover or wildflower)
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon fresh or dried oregano
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 475°F (246°C). If using a pizza stone, place it on the middle rack to heat up. Let dough sit at room temperature while oven heats.
  2. Heat a skillet over medium-high heat. Crumble the hot Italian sausage into the pan and cook until browned and cooked through, about 5-7 minutes. Drain excess fat.
  3. In a mixing bowl, toss the cooked sausage with minced garlic, oregano, and red pepper flakes if using.
  4. Lightly flour your work surface and stretch or roll out the dough into a 12-inch circle. Transfer to a piece of parchment paper.
  5. Brush the dough lightly with olive oil, especially around the edges. Sprinkle half the mozzarella evenly over the dough, then scatter the spicy sausage mixture on top. Add crumbled feta over everything, then the remaining mozzarella.
  6. Slide the pizza (with parchment) onto your pizza stone or baking sheet. Bake for 12-15 minutes until crust is golden and cheese is bubbly. Watch closely after 10 minutes to avoid burning.
  7. Remove pizza from oven and immediately drizzle honey evenly over the top. The heat will help it spread and melt slightly.
  8. Let the pizza cool for 2-3 minutes, then slice and serve.
