Honey Feta Sweet Potatoes That Wow Every Time

- 3 medium sweet potatoes, peeled and sliced into ½-inch rounds
- 2 tbsp olive oil
- Salt & pepper to taste
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 2 tbsp honey (plus more for drizzling)
- ½ cup crumbled feta cheese
- 1 tsp red pepper flakes (optional)
- Fresh thyme sprigs for garnish
Instructions
- Preheat oven to 400°F. Toss sweet potato slices with olive oil, garlic powder, smoked paprika, salt, and pepper.
- Arrange on a parchment-lined baking sheet and roast for 20–25 minutes, flipping halfway through.
- Once roasted, brush or drizzle warm sweet potatoes with honey.
- Sprinkle crumbled feta cheese over the warm rounds so it melts slightly.
- Add red pepper flakes if using, for a spicy kick.
- Garnish with fresh thyme sprigs and an extra drizzle of honey if desired. Serve warm.
