Description

Grandma’s Beef and Noodles is a comforting, hearty dish featuring tender beef chuck roast slow-simmered in a rich beef stock with aromatic herbs, combined with wide egg noodles.


Ingredients

  • 2 pounds beef chuck roast, cut into 2-inch pieces
  • Fine sea salt and freshly-ground black pepper, to taste
  • 2 tablespoons all-purpose flour
  • 3 tablespoons olive oil, divided
  • 1 large white onion, diced
  • 5 cloves garlic, minced
  • 2 sprigs fresh thyme
  • 1 large bay leaf
  • 8 cups beef stock, divided
  • 12 ounces wide egg noodles

Instructions

  1. Season the beef pieces generously with salt and pepper, then toss them in flour until coated. Heat 1 tablespoon olive oil in a large stockpot over medium-high heat. Brown half of the beef pieces thoroughly, turning occasionally. Transfer browned beef to a plate. Repeat with 1 tablespoon oil and remaining beef, then set aside.
  2. Add remaining 1 tablespoon olive oil and diced onion to the stockpot. Sauté onions for 4-5 minutes until softened, stirring occasionally. Add minced garlic and sauté for 1 more minute. Pour in 6 cups of beef stock. Return browned beef to pot, add thyme sprigs and bay leaf, stirring to combine.
  3. Bring broth to a low simmer. Reduce heat to low, cover, and simmer gently for 2.5 hours or until beef is very tender and shreds easily with a fork.
  4. Remove beef from pot and shred into bite-sized pieces using two forks. Discard bay leaf and thyme sprigs.
  5. Add the remaining 2 cups beef stock to the pot and increase heat to high to bring the broth to a boil. Add the wide egg noodles and cook, stirring occasionally, until noodles are al dente, about 7-9 minutes.
  6. Remove pot from heat. Stir shredded beef back into the noodles and broth. Adjust seasoning with additional salt and pepper as needed.
  7. Spoon the beef and noodles into bowls, garnish with freshly ground black pepper, and serve immediately for a comforting meal.

Notes

  • This dish is best served hot.
