- 4 large egg whites
- 1 cup granulated sugar
- 1/4 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- Green gel food coloring
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- 1 cup fresh raspberries
- 1 cup red currants or cranberries
- A few fresh rosemary sprigs
- 1 tablespoon powdered sugar for dusting
Instructions
- Preheat the oven to 225°F and line 2 baking sheets with parchment paper.
- In a clean mixing bowl, beat the egg whites until foamy, then add the cream of tartar.
- Gradually add the granulated sugar while beating until stiff glossy peaks form.
- Mix in the vanilla extract and a small amount of green gel food coloring until evenly tinted.
- Transfer the meringue to a piping bag fitted with a large star tip.
- Pipe wreath shapes onto the prepared baking sheets, leaving a small center opening in each one.
- Bake for 1 hour, then turn off the oven and let the meringues cool completely inside the oven.
- Beat the heavy whipping cream with the powdered sugar until soft to medium peaks form.
- Top the cooled meringue wreaths with whipped cream.
- Decorate with raspberries, red currants or cranberries, and tiny rosemary sprigs.
- Dust lightly with powdered sugar and serve.
