Delicious High Protein White Bean Soup
Ingredients

- 2 tablespoons olive oil
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cans (15 oz each) white beans, rinsed and drained
- 4 cups low-sodium chicken or vegetable broth
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- Chopped fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté for 5-7 minutes until translucent.
- Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.
- Add the rinsed and drained white beans, broth, dried thyme, dried rosemary, and red pepper flakes (if using). Stir to combine.
- Bring the mixture to a simmer and let it cook for 15-20 minutes, or until the beans are tender and the flavors have melded.
- Season with salt and black pepper to taste.
- Ladle the soup into bowls and garnish with chopped fresh parsley.
