- 1 cup Red Bell Pepper (Finely dice before adding.)
- 1 cup Green Bell Pepper (Finely dice before adding.)
- 1/2 cup Green Onions (Slice before adding for even distribution.)
- 1 teaspoon Garlic Powder
- 1 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 1 spray Cooking Spray (Use liberally for best results.)
Instructions
- Preheat the oven to 350°F. Grease a silicone muffin pan or standard muffin tin with cooking spray to prevent sticking.
- Blend egg whites and cottage cheese together in a blender until smooth and creamy.
- Stir the mixture into a bowl and toss in shredded mozzarella, garlic powder, salt, and black pepper. Combine well.
- Fold in diced red and green bell peppers, and sliced green onions until evenly mixed.
- Spoon the mixture into muffin wells, filling each about three-quarters full.
- Bake for 22 to 26 minutes, until tops are lightly golden and centers are set.
- Cool in the pan for 5 minutes to firm up slightly, then gently remove the bites.
- Serve warm for a delicious breakfast or allow to cool completely for meal prep storage.
