Ingredients

  • 1 lb ground beef
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 1 medium bell pepper (diced)
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 1 can (6 oz) tomato paste
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • to taste salt
  • to taste pepper
  • optional toppings: shredded cheese, sour cream, chopped green onions, avocado

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat and transfer the meat to the crockpot.
  2. Add the diced onion, minced garlic, and bell pepper to the crockpot with the cooked meat.
  3. Stir in the kidney beans, black beans, diced tomatoes (with juices), tomato paste, and beef broth.
  4. Add the chili powder, cumin, paprika, oregano, salt, and pepper. Mix well to combine all ingredients.
  5. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally if possible.
  6. Taste and adjust seasoning if necessary before serving.
  7. Serve hot, topped with your choice of shredded cheese, sour cream, chopped green onions, or avocado.
