Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound beef stew meat, cut into 1-inch cubes
  • ¾ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • 1 medium yellow onion, chopped
  • 3 ribs celery, chopped
  • 3 carrots, peeled and chopped into ½-inch pieces
  • 8 ounces cremini mushrooms, sliced
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 2 tablespoons tomato paste
  • 6 cups low sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 bay leaves
  • ¾ cup pearl barley, rinsed

Instructions

  1. Pat the beef stew meat dry and season with salt and pepper. Heat olive oil in a Dutch oven over medium-high heat. Sear beef in batches until deeply browned on all sides. Remove beef and set aside.
  2. Reduce heat to medium. Add onion, celery, and carrots to the pot. Cook until softened, about 6-8 minutes. Add mushrooms and garlic; cook for another 3-5 minutes until fragrant. Stir in thyme and tomato paste; cook for 1-2 minutes.
  3. Pour in beef broth and scrape the bottom of the pot to deglaze. Add Worcestershire sauce and bay leaves. Return the seared beef and any juices to the pot. Bring to a simmer, then reduce heat to low, cover, and cook for at least 1 hour, or until beef is tender.
  4. Remove bay leaves. Add rinsed pearl barley to the pot and stir. Increase heat slightly to bring back to a simmer, then reduce heat to low, cover, and cook for another 30-45 minutes, or until barley is tender and soup has thickened. Stir occasionally.
  5. Taste and adjust seasoning with salt and pepper as needed. Add more Worcestershire sauce if desired. Discard bay leaves if not already removed. Serve hot, garnished with fresh parsley or chives if desired, with crusty bread for dipping.
