  • 4 rolls Brioche Hot Dog Rolls
  • 1 spray Nonstick Cooking Spray (For grilling.)
  • 1 cup Castelvetrano Olives (Pitted.)
  • 1 cup Giardiniera (Mild or hot.)
  • 2 tablespoons Capers
  • 1 cup High-Quality Mayonnaise (Or vegan mayonnaise.)
  • 1/2 cup Fresh Basil Leaves
  • 2 cloves Garlic (Minced.)
  • 1 medium Lemon (Zest and juice.)
  • 1 teaspoon Kosher Salt
  • 1 teaspoon Ground Black Pepper
  • 1 tablespoon Balsamic Glaze (Optional.)

Instructions

  1. Prepare the grill for indirect cooking. Preheat one side to high heat while leaving the other side cooler.
  2. In a food processor, combine mayonnaise, minced garlic, basil leaves, and lemon zest. Blend until smooth.
  3. Pulse Castelvetrano olives, giardiniera, and capers in the food processor until roughly chopped. Set aside.
  4. Place sausages over the cooler side of the grill. Cook for 4–5 minutes until reaching 150°F internally.
  5. Move sausages to direct heat for an additional 2–3 minutes per side until reaching 160°F and charred.
  6. Spritz brioche rolls with cooking spray and toast over the grill for about 1–2 minutes until golden.
  7. Assemble sandwiches with sausages, giardiniera relish, and lemon basil aioli. Drizzle with balsamic glaze if desired.
