- 4 links Fresh Italian Sausage (Choose between hot or mild.)
- 4 rolls Brioche Hot Dog Rolls
- 1 spray Nonstick Cooking Spray (For grilling.)
- 1 cup Castelvetrano Olives (Pitted.)
- 1 cup Giardiniera (Mild or hot.)
- 2 tablespoons Capers
- 1 cup High-Quality Mayonnaise (Or vegan mayonnaise.)
- 1/2 cup Fresh Basil Leaves
- 2 cloves Garlic (Minced.)
- 1 medium Lemon (Zest and juice.)
- 1 teaspoon Kosher Salt
- 1 teaspoon Ground Black Pepper
- 1 tablespoon Balsamic Glaze (Optional.)
Instructions
- Prepare the grill for indirect cooking. Preheat one side to high heat while leaving the other side cooler.
- In a food processor, combine mayonnaise, minced garlic, basil leaves, and lemon zest. Blend until smooth.
- Pulse Castelvetrano olives, giardiniera, and capers in the food processor until roughly chopped. Set aside.
- Place sausages over the cooler side of the grill. Cook for 4–5 minutes until reaching 150°F internally.
- Move sausages to direct heat for an additional 2–3 minutes per side until reaching 160°F and charred.
- Spritz brioche rolls with cooking spray and toast over the grill for about 1–2 minutes until golden.
- Assemble sandwiches with sausages, giardiniera relish, and lemon basil aioli. Drizzle with balsamic glaze if desired.
