This Grilled Chicken Avocado Salad is light and flavorful, perfect for lunch or dinner.
Ingredients

- 2 grilled chicken breasts, sliced
- 1 cup cooked orzo (200g)
- 1 large avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, sliced
- 2 cups mixed greens
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper. Grill or cook in a skillet over medium heat until fully cooked. Let rest, then slice.
- Cook orzo according to package instructions and set aside.
- Slice avocado, tomatoes, and cucumber. Wash greens.
- Add greens as a base, then layer orzo, grilled chicken, avocado, tomatoes, and cucumber.
- Drizzle with olive oil and lemon juice, season with salt and pepper, and serve fresh.
