Instructions
- Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
- In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
- In a separate bowl, whisk together the buttermilk, oil, eggs, and vanilla extract. Stir in the green food coloring until well combined.
- Slowly pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix.
- Divide the batter evenly among the prepared muffin cups, filling them about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely on a wire rack.
- For the frosting, beat the butter and cream cheese in a large bowl until light and fluffy. Gradually add the powdered sugar and vanilla extract, and continue beating until the frosting is smooth and creamy.
- Frost the cooled cupcakes with the cream cheese frosting and serve.
