- 3 ½ to 4 lbs chicken pieces (bone-in, skin-on; boneless can be used but adjust cooking time)
Instructions
- In a large bowl, combine the yogurt, olive oil, minced garlic, dried oregano, salt, and pepper. Mix well until smooth and creamy.
- Gently fold in the lemon zest and juice along with the chopped parsley.
- Place your chicken pieces into a zip-top bag, then pour in the marinade and seal tightly.
- Let the chicken marinate in the fridge for at least 30 minutes, or up to 4 hours.
- Preheat your oven to 375°F (190°C) or prepare your grill to medium heat.
- If baking, place the marinated chicken in a casserole dish. If grilling, arrange on the grill.
- Bake for 45-60 minutes, or grill until the chicken skin is golden brown and juices run clear.
- Allow the chicken to rest for 5 minutes before serving.
