  • 2 eggs

  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
  2. In a mixing bowl, whisk together gluten-free flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together honey or maple syrup, eggs, Greek yogurt, and vanilla extract until smooth.
  4. Pour the wet mixture into the dry ingredients, gently folding with a spatula until just combined.
  5. Add the blueberries, incorporating them gently to avoid breaking them.
  6. Spoon the batter into the muffin cups, filling each about ¾ full.
  7. Bake for 18-20 minutes, until a toothpick comes out clean.
  8. Cool for 5 minutes in the tin, then transfer to a wire rack.
