  • 1 lb russet potatoes, peeled and grated
  • 1 small yellow onion, finely minced
  • Pinch of salt, plus more for seasoning
  • Pinch of black pepper
  • 3 tbsp all-purpose flour
  • 1 large egg
  • Vegetable oil for frying

Instructions

  1. Peel and grate the russet potatoes using the large holes of a box grater into a medium bowl. Finely mince the yellow onion and add it to the bowl. Squeeze the potato and onion mixture thoroughly in a clean kitchen towel or cheesecloth to remove as much liquid as possible.
  2. Add the all-purpose flour and the large egg to the squeezed potato and onion mixture. Mix thoroughly until well combined, ensuring no pockets of raw flour or egg remain.
  3. Season the batter with a pinch of salt and a pinch of black pepper. Gently mix to distribute the seasonings. The batter should be cohesive but slightly loose.
  4. Heat vegetable oil in a cast-iron skillet over medium-high heat until shimmering. The oil should be about ¼ to ½ inch deep. Test the oil temperature by dropping a tiny bit of batter; it should sizzle vigorously.
  5. Carefully drop portions of the potato mixture into the hot oil using a large spoon, forming pancakes about 3-4 inches in diameter. Do not overcrowd the pan. Gently flatten each pancake slightly with the back of the spoon.
  6. Fry for 4-5 minutes per side, or until deep golden brown and crispy. Flip carefully with a spatula. Adjust heat as needed to prevent burning.
  7. Remove the fried pancakes from the skillet using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil. Sprinkle with additional salt and pepper to taste immediately after frying. Serve hot.
