  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 1.5 lbs baby potatoes, halved
  • 1/2 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh parsley

Instructions

  1. Begin by placing the chicken breasts in the bottom of your crockpot. Nestle the halved baby potatoes around them.
  2. In a medium mixing bowl, combine the grated Parmesan cheese, minced garlic, dried oregano, basil, salt, pepper, and olive oil.
  3. Pour this tantalizing mixture over the chicken and potatoes. Use a spatula to gently coat everything evenly.
  4. Cover the crockpot and set it to cook on low for 6 hours or high for 3 hours.
  5. Once cooked, sprinkle freshly chopped parsley on top and serve hot.
