- 4 boneless, skinless chicken breasts (1.5 lbs)
- 1.5 lbs baby potatoes, halved
- 1/2 cup grated Parmesan cheese
- 4 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup olive oil
- 1/4 cup chopped fresh parsley
Instructions
- Begin by placing the chicken breasts in the bottom of your crockpot. Nestle the halved baby potatoes around them.
- In a medium mixing bowl, combine the grated Parmesan cheese, minced garlic, dried oregano, basil, salt, pepper, and olive oil.
- Pour this tantalizing mixture over the chicken and potatoes. Use a spatula to gently coat everything evenly.
- Cover the crockpot and set it to cook on low for 6 hours or high for 3 hours.
- Once cooked, sprinkle freshly chopped parsley on top and serve hot.
